A delicious, healthy, and nutrient-rich quesadilla made with Don’s Island Grain Salad and Spicy Black Bean with Corn Salad. Both salads are vegetarian/vegan friendly and are also two of our new clean label items, free of artificial flavors, colors and preservatives!

Ingredients
- 2 large tortillas
- Mexican blend shredded cheese (or cheese of choice)
- 1 Cup Don’s Island Grain Salad
- 1 Cup Don’s Spicy Black Bean with Corn Salad
- 1 Jalapeno, seeds removed and diced
- ½ Cup Diced Tomato
- ⅓ Cup Diced Onion
- Handful of Cilantro, stems removed and rinsed
- Sour Cream
- Guacamole
- Salsa
- Lime
Instructions
- In a large bowl, mix 1 Cup of Don’s Island Grain Salad with 1 Cup of Don’s Spicy Black Bean with Corn Salad
- Mix in diced onion, tomato, jalapeno and cilantro
- Heat a large skillet over medium heat
- Place one tortilla in pan and top with salad mixture. Add a generous amount of cheese and place second tortilla on top. Once cheese has started to melt, flip and brown the other side. Remove quesadilla one cheese has melted
- Once cooled, slice quesadilla in half, then slice each half into three even slices. Dip in sour cream, guacamole and salsa, and enjoy!
