Caribbean Quesadillas

A delicious, healthy, and nutrient-rich quesadilla made with Don’s Island Grain Salad and Spicy Black Bean with Corn Salad. Both salads are vegetarian/vegan friendly and are also two of our new clean label items, free of artificial flavors, colors and preservatives!

  • 2 large tortillas
  • Mexican blend shredded cheese (or cheese of choice)
  • 1 Cup Don’s Island Grain Salad
  • 1 Cup Don’s Spicy Black Bean with Corn Salad
  • 1 Jalapeno, seeds removed and diced
  • ½ Cup Diced Tomato
  • ⅓ Cup Diced Onion
  • Handful of Cilantro, stems removed and rinsed
  • Sour Cream
  • Guacamole
  • Salsa
  • Lime


  1. In a large bowl, mix 1 Cup of Don’s Island Grain Salad with 1 Cup of Don’s Spicy Black Bean with Corn Salad
  2. Mix in diced onion, tomato, jalapeno and cilantro
  3. Heat a large skillet over medium heat
  4. Place one tortilla in pan and top with salad mixture. Add a generous amount of cheese and place second tortilla on top. Once cheese has started to melt, flip and brown the other side. Remove quesadilla one cheese has melted
  5. Once cooled, slice quesadilla in half, then slice each half into three even slices. Dip in sour cream, guacamole and salsa, and enjoy!
