Pumpkin Pear Crunch Pie

The spicy-sweet flavors of pumpkin pie are whipped to velvety perfection with spice cookies.

  • Don’s Pumpkin Pie Mousse 3-4 cups depending upon depth of the pie shell
  • 2 ripe Bartlett pears diced
  • Walnut or hazelnut oil
  • One 9” prepared pie crust, graham or nut recommended
  • Maple granola
  • Dried cranberries, chopped


  1. Core and dice pears
  2. Rub pears with oil and roast at 400 F until soft and starting to brown slightly, set aside to cool
  3. Pipe a thin layer of mousse into the pie shell
  4. Top with a layer of the roasted pears, set aside 8 cubes for garnish
  5. Pipe another layer of mousse
  6. Freeze until firm enough to cut into “neat” slices, garnish (see below) serve chilled not frozen
  7. Plate and garnish with granola mixed with the cranberries, whipped cream, roasted pear cube
