Pumpkin Pear Crunch Pie
The spicy-sweet flavors of pumpkin pie are whipped to velvety perfection with spice cookies.

Ingredients
- Don’s Pumpkin Pie Mousse 3-4 cups depending upon depth of the pie shell
- 2 ripe Bartlett pears diced
- Walnut or hazelnut oil
- One 9” prepared pie crust, graham or nut recommended
- Maple granola
- Dried cranberries, chopped
Instructions
- Core and dice pears
- Rub pears with oil and roast at 400 F until soft and starting to brown slightly, set aside to cool
- Pipe a thin layer of mousse into the pie shell
- Top with a layer of the roasted pears, set aside 8 cubes for garnish
- Pipe another layer of mousse
- Freeze until firm enough to cut into “neat” slices, garnish (see below) serve chilled not frozen
- Plate and garnish with granola mixed with the cranberries, whipped cream, roasted pear cube
